The cheese made by the mountain itself
The road is part of the experience. Midway, a bridge appears to float above the clouds, an engineering feat worth the journey in itself. If time allows, we also stop at a fortified village of Templars and Hospitallers, preserved on the plateau in austere stone.
At the end of the road are the caves where the mountain takes over the cheesemaker's work. Cold air moves through natural cracks in the rock, creating the conditions that have shaped Roquefort for centuries. Tasting it here is not an add-on, but the natural end of a journey to the source of one of France's most distinctive flavours. A sweet wine brings the salt and richness into perfect balance.
