The Wild West, in France
Black bulls graze under the watch of the gardians, the Camargue's cowboys, whose work has changed little over the centuries. White horses carry their riders through salt marshes and wetlands. At sunset, flamingos take possession of the sky, thousands of birds lifting almost as one.
Nearby stands a fortified town built as a departure point for the Crusades, its towers and extraordinarily thick walls still beautifully preserved.
Dinner brings gardiane de taureau with rice grown on the same land, in the only part of Europe where it is cultivated on this scale.
